Champ d’Oiseaux is the Cabernet d’Anjou from Domaine des Trottières, in the Loire Valley, made from Cabernet Franc and Cabernet Sauvignon grown on gravelly and sandy-loamy soils.
Tank vinification and cold management of fermentation and aging are aimed at preserving the fruit and the gently sweet character of the appellation.
A light-bodied rosé, in which the perceptible sweetness gives roundness to the palate and the acidity supports its lift. The texture is soft and flowing, without a pronounced tannic grip, with a balance centered on the contrast between juiciness and freshness. The aromatic character recalls raspberry and redcurrant above all, with a register of fresh and immediate fruit. The combination of the two Cabernets retains aromatic definition, while the cold processing favors a clear and fragrant style. The finish echoes the red fruit, with a sweet sensation balanced by the liveliness of the palate.
